Cooking has always been part of my life. My father loves to cook and host people. Growing up we always had people over for BBQs and Sundays were always for Beef Pilau. He taught us many Swahili dishes of which all of us (my siblings and I) mastered over the years. Living in different countries as a young person and making friends from different cultures exposed me to a whole new world of cuisines.
This Shrimp and Noodle Soup, is a recipe taught to me by a very good friend and housemate Sau Phan, during my university years.
You might wonder how did we afford shrimp/prawns as university students. A little disclaimer on this recipe; we used to buy the cheap frozen shrimps, but now I prefer using fresh prawns as they are more rich in flavor. The rest of the ingredients are affordable and easily available. This is a pretty simple dish to make and here is how to make it.
6 large shrimps/prawns
1 baby bok choy
2 scallions greens also known as Green onions (chopped)
3 Garlic cloves large & 1 tsp fresh ginger
1 packet instant noodles or dry egg noodles
2 tbsp vegetable oil
1/2 tsp Soy sauce
1 pinch black pepper and salt
1 tbsp chopped red onions for garnish
Few drops of chili sauce or chili flakes for some heat (optional)
In a pan heat some vegetable oil, once heated fry the shrimp/prawns with the scallions, garlic and ginger once the shrimp/prawns are ready add the chili flakes; then set aside. (remember to leave some scallions for garnish)
In a pot bring to boil some water and add the instant noodles with the flavor sachets as well. (use the shrimp instant noodle for consistency in flavor). Once the noodles are boiling wash and clean the bok choy then add them to the boiling noodles. The noodles don’t take long to cook, so you just want to blanch the bok choy. Once all are done, add the cooked shrimp/prawns. Do taste before adding any salt or pepper, because the sachets spice mixture tend to have salt in them. Then add the soy sauce, mix together and for some added heat you can put some chili sauce of your liking or chili flakes.
Finally place the soup in a bowl and add the scallions and chopped red onions as garnish and enjoy!!!
And remember you can add or take out ingredients. You can make this soup to you liking. You can make it with beef, chicken or even make it vegetarian or vegan, it’s all up to what tickles you fancy.
