I love food and cooking for me is very therapeutic. However I am an unconventional cook, what they call ‘bootleg chef’. I don’t really follow recipes and when I do I don’t really follow them to the tea, unless I am baking ofcourse! I tend to make it up as I go and hope it turns out great and I must say 8 out of 10 times, it does. So here is what I made over the long weekend. Enjoy, try them out, make it your way and mostly just have fun cooking.

Fish Curry

  1. 3 Fillets of fish (cut into cubes)
  2. 2 Red Onions (peeled and chopped)
  3. 2 Tomatoes (chopped)
  4. 4 Cloves of Garlic (or more if you wish)
  5. 2 Large potatoes (peeled and cut into cubed)
  6. 2 Tbsp yellow curry powder (of your choice)
  7. Pinch of salt and black pepper
  8. A handful of fresh coriander leaves

In a pan fry the red onions and garlic, until the onions are golden/brown, then add the potatoes. Let them cook until the outer part of the potatoes turns soft, then add the tomatoes, let them cook for about 10 to 15 minutes, then add the fish, the yellow curry powder, pinch of salt and pepper, put the lid on and let it simmer until cooked. Once the curry is cooked add the fresh coriander leaves.

I always like a simple salad to go with a curry. This one is of red onions, cumbers and tomatoes with lime juice, salt and a hint of black pepper.

Living in Dar we have the pleasure of fresh produce through out the year. So watermelon and lime juice was a great drink to complement the curry. Watermelon, lime juice blended together. It’s best served with lots of ice.
